Ube- Purple Yams
The purple Yam is another tuber of the Dioscoreaceae family. It has other names like water yam or in the Philippines, Ube or Ubi. This variety is smaller in size compared to the Diamond or Hespino yams. It has a very particular flavor, with vanilla and white chocolate notes as well as a nutty flavor similar to pistachio. The most obvious feature of this variety of yams, is the deep purple interior, the pigments give the pulp a purple or purplish color. It is a very nutritious tuber with multiple benefits, such as: high content of anthocyanins (flavonoids) which are extraordinary antioxidants, is a high source of complex carbohydrates, as well as vitamin C. It also content potassium, and calcium, iron, and vitamin A.
