This is one of the most important ingredients of the Peruvian cuisine. Is part of the Capsicum baccatum genus. With 40,000 SHU it is placed among the chilies with medium pungency along with the cayenne.
This variety is available in mash (with seeds), paste (without seeds) both fermented with added salt. It is also available in our special concentrated paste (COMPACTO) and dehydrated both in whole or flakes.
None of our products have chemical additives, flavourings or colorants. However, according to each client's requirements we can add a percentage of vinegar, acetic acid or citric acid. We can also mix varieties to reach particular flavors, textures or levels of spiciness.
